4) Breakfast & Energy Bars
Breakfast Apricot Bar
No eggs, no wheat, no dairy
Top and bottom mixture:
1/2 cup apricot juice (from health food store)
1 box crispy rice cereal
1/2-3/4 cup honey or pure maple syrup
1 cup quick cooking oats
Mix all together, press half the mixture on the bottom of 9x13” oiled pan.

Filling
1 pound dried, diced apricots
2 cups apricot juice
1cup honey
1 tablespoon arrowroot powder
1teaspoon cinnamon 1 teaspoon ginger
1/2 ginger
1/2 teaspoons cloves
Blend all in saucepan and bring to a boil, turn down the heat and simmer to
thicken, about 20 minutes. Pour over bottom mixture in the pan. Put the top
mixture over all and pat down. Bake at 375 degrees for 20-25 minutes. Cool and
cut into bars.

Energy Granola Bars
No cooking required.
1-1/2 cups granola
1/4 teaspoon sea salt
1/2 cup wheat or corn germ
1/2 cup finely shredded coconut
1/2 cup chopped dates or raisins
1 cup powdered soy or skim milk
1/4 cup fruit juice
1 cup date sugar or raw sugar
2-1/2 cups crunchy nut butter
1 cup sesame seeds (topping)
Mix fruit juice with dry sweetener to moisten. Mix all ingredients together,
except sesame seeds, adding nut butters last. Knead in butters; you may need a
little liquid for the mixture to hold together. Add honey or fruit juice, a
tablespoon at a time, until you can press into a long or square pan about an
inch or more thick. Press sesame seed or chopped dried fruit on top. Chill and
cut into bars and wrap each separately in plastic or waxed paper. Store in
refrigerator.
