Doreen loves to share her recipes!  Here are a few favorites!

6) Main Dishes

Macaroni and Cheese

This can be made with a non-dairy products using tofu cheese and blended tofu.

12 ounce elbow, spiral, or wide noodles

2 cups of shredded cheddar cheese

4 thick slices of tomatoes

1/2 stick of butter or vegetable oil

1/2 cup of oat or whole wheat flour

1 cup of plain yogurt

1-1/2 cup soy or cow’s milk

2 teaspoons Spike seasoning

Dash of cayenne pepper

1 tablespoon chopped parsley

Boil macaroni about 7 minutes until tender (do not over cook, test for tenderness), drain Melt the butter in a skillet and add the flour, stirring constantly while adding the milk and yogurt. Add the seasonings. Stir until thickened add one cup of the shredded cheese. Place the macaroni into the cheese sauce, put in a casserole dish and top with the tomato slices and the rest of the cheese. Bake for 25 minutes in 350 degrees oven or until brown on top. May add a can of tuna, peas, and garlic for a one dish meal.

 

Brown Rice Chicken or Turkey Soup

Gramma’s cold and flu remedy

1/4 cup of extra virgin olive oil

2 thinly sliced carrots

2 cups diced celery

1/4 cup of diced red pepper

1/2 cup chopped zucchini

2 quarts (8 cups) stock or water

1 skinless turkey or chicken breast

3/4 cup of uncooked brown rice

1/4 cup of dried or finely chopped parsley

2 teaspoons of Spike seasonings

Dash of cayenne pepper

1 tablespoon of tamari (optional)

Sauté carrots, celery, red pepper and zucchini until barely tender. Heat chicken stock to boiling, add rice and simmer for 30 minutes, then add sautéed veggies and seasonings. Simmer another 15 - 30 minutes. You may substitute barley for the rice and add 1 cup of azuki beans. Add 1 large onion to the vegetables and you have Delicious barley-bean soup. Also use 3 cups lentils in place of the rice or the barley and beans for lentil soup.

 

Creamed Chicken Breast

4 boneless, skinless chicken breasts

Dash of cayenne pepper and Spike seasoning

Juice of one lemon

1/2 chopped onion

1 clove crushed garlic

2 teaspoons minced ginger root or 1/2 teaspoon ginger powder

1-1/2 cups plain yogurt

Place chicken in baking pan and pour Spike over it. Blend remaining ingredients in a blender or processor until smooth, and pour over chicken. Bake for 25 minutes in 400 degrees oven. Serve over brown rice and steamed broccoli.
