3) Sweet Treats
Oatmeal Cookies
1 cup butter
1 cup cane sugar
1/4 cup molasses
1/2 cup honey
2 eggs teaspoons vanilla extract
1-1/2 cups light spelt flour
1 teaspoon arrowroot powder
1 teaspoon seasalt
3 cups old fashioned oats
1/2 cup chopped pecans
1/2 cup raisins
1/2 cup sweetened carob chips
In a mixing bowl, cream butter, cane sugar, molasses & honey. Add eggs
and vanilla. Combine flour, arrowroot powder and salt; gradually add to creamed
mixture. Stir in oats, nuts, raisins and carob chips. Chill for 30 minutes.
Shape into 1-1/2 inch balls; place 2in. apart on greased cookie sheets. Bake at
350 degrees for 10 -12 minutes or until golden brown. Cool on wire racks. YUM
YUM !!

Crispy Bars
3 cups puffed or crispy rice cereal
3/4 cup pecan or other nut butter
1/3 cup honey or brown rice syrup
1/3 cup crushed pecans or other nuts (optional)
Add extra fructose if you need it softer or sweeter.
Mix ingredients together with oiled hands and press into 6x10” greased pan
and refrigerate until firm. Cut and serve.
